My Favorite Quick and Easy Soup Recipes

If you’re anything like me, you’re always looking for easy meals to cook and meals that last for more than one dinner or lunch. Here are my 3 favorite quick and easy soup recipes. (Although I tend not to cook with recipes much — like Remy in Ratatouille, I add a little of this and a little of that, taste and tweak.) So there won’t be precise measurements here. I have full confidence that you, like me, can successfully improvise, so here goes!

Quick Butternut Squash Soup

  • 1 large package of cut butternut squash
  • 2 cartons of broth (I use Wegmans’ Thai stock)
  • Curry powder (if you use flavored stock, taste before adding)
  • Brown sugar or coconut sugar (maybe a tablespoon)
  • Coconut milk or coconut creamer (just a small can or carton if you want to soften the squash taste a bit)
  • Pumpkin seeds to top if desired.
  • Salt and pepper as desired

Put squash in large pot; add broth, seasoning, sugar, and cook for maybe two hours until squash is soft. Put in blender when cool to smooth; return to pot and add coconut milk, if desired. Easy peasy. Top with pumpkin seeds and enjoy with a slice of sourdough bread and a salad.

Easy Pea or Bean Soup

  • A ham bone (these can be bought at the store or you can use one that’s left over)
  • A package of pea soup mix or bean soup mix (I use Honey Baked Ham or 365 Brand)
  • One can of diced tomatoes (for bean soup)
  • Carrots (I buy matchstick carrots) for pea soup
  • One Diced Onion
  • Diced celery
  • Water

Put ham bone and peas/beans in large pot and cover with water. Bring to a boil and cook for maybe 2 hours. Remove ham bone and pick off ham when cool. Return ham, tomatoes, onions, carrots, and celery to pot and let simmer. Serve with French bread and a salad if desired.

Clean out your fridge soup

  • Stock (veggie, beef, chicken….your choice)
  • Canned tomatoes (diced or crushed are ideal)
  • An onion
  • Garlic or garlic powder
  • Salt and pepper to taste

Here’s where you can improvise:

  • Green veggie (I’ve used zucchini, spinach, or kale)
  • Chick peas or other can of beans of any type
  • Breakfast sausage, cooked bacon, or other meat if desired.
  • Any other veggie that you want to use (I’ve used mushrooms, peppers, carrots, celery, cabbage)
  • Seasoning specific to the type of soup you want to make (for example: soy sauce and rice vinegar and a touch of ginger for Asian soup; Sriracha if you want to add an element of spice, whatever). You can’t go wrong!

SO these are my 3 favorite quick and easy soup recipes. ;o) Soups are ideal for those of us who are busy and don’t have much time to cook. I love anything I can just throw in a pot and let it cook itself.
